A simple keto side dish? With bacon? Its what should always be for dinner. No matter what party I go to, I look for the stuff with the crispy crunchy bacon, and I bet your guests do too. They’ll appreciate it, and so will your motivation to stay Keto during Easter (and any other holiday you see fit to make this dish with). The wonderful thing about this dish is that if you, or your friends are on the Keto Diet, Whole30 or Paleo, then this dish is wonderful for all of you. You can also sprinkle some freshly shredded Parmesan cheese on these bad boys once you’ve placed them on the serving tray for a little extra presentation.
This easy to make dish is also one of those dishes that you can prepare ahead of schedule, it stores wonderfully for up to 2 days in a Zip-Loc bag or a sealed Tupperware style container. This dish is very versatile, as it can be cooked in multiple different manners. The way this recipe is written is for my favorite way, a nice Cast Iron. However, the Bacon Wrapped Asparagus can also be cooked on the grill, in the oven or even an air fryer.
I hope this makes its way to your kitchen as soon as possible. Just remember when cooking it, not to eat it all in the process! Trust me, that’s the hardest part! ENJOY!
- Thin Sliced Bacon
- Salt and Pepper
Prep: 10 Minutes Cook Time: 10 Minutes
Prep Directions: Find the weak spot of the Asparagus stalk by slightly bending, where the apex of the bend is, is where you want to snap the stalk. Discard the end pieces of the stalks and wash the stalks with the Asparagus tips on them. Pat these dry. Sprinkle with salt and pepper. Begin wrapping the Asparagus by taking 2-3 pieces of the same width and holding them together. Take a thin slice of bacon and begin wrapping them from the bottom of the stalk to the tip, slightly overlapping each wrapping with the bacon. Once you’re at the top, give it a good squeeze and twist to ensure placement of the bacon. Repeat until finished with desired amount.
Cooking Directions: In a hot pan (I prefer Cast Iron), place your pieces of Bacon Wrapped Asparagus about ½ inch from each-other. Make sure not to overcrowd your pan. About 2 minutes on each side to ensure bacon is crisp and Asparagus is smooth and evenly cooked through.
