Everyone loves soup! This Keto soup recipe is “souper” easy! It’s late into the winter season, and we are all cold and over it. Warm up with this delicious KETO AND LOW CARB loaded Ham and “NO” Potato Soup. Budget Friendly and makes plenty to go around. Trust me, THIS WILL HIT THE SPOT!

Loaded Ham and “NO” Potato Soup Keto Low Carb Delicious Yummy Simple Easy Recipe

Ingredients:

1 Clove Finely Minced Garlic

1 Small Yellow Onion Finely Chopped

1/4th Cup Half and Half or Heavy Whipping Cream

1 Stick Land O Lakes Salted Butter

8 oz. Daisy Sour Cream

1 Colby Block Cheese freshly Shredded

2 Knorr Cube Chicken Bouillon

32 oz. Great Value Chicken Broth

1 whole (up to 4 lbs) Fresh Boneless Pork Shoulder Picnic Roast or Uncured Ham (cooked ahead of time)

.5 oz Fresh Chives

7 Turnips

1 Teaspoon Xanthan Gum (thickening agent)

Total Cost at Walmart: $25.53 (Some of these items you’ll already have in your kitchen, this is the cost if you have zero of the items)

Prep Directions:

Peel and Cube Turnips into 1-inch cubes, dice Onions and chop pork into your preferred size cubes. Chop the Chives into small slivers. Finely mince 1 clove of garlic.

Soup Base Directions:

Step 1: Melt 1 stick of Land O Lakes Salted BUTTER in pot, once melted add your entire diced ONION, 2 Knorr Chicken BOUILLON Cubes, 1 finely minced clove of GARLIC. Cook for 5 minutes to colorize the mixture and marry the flavors.

Step 2: Next add half of your CHIVES, 32 oz. of CHICKEN STOCK, cubed TURNIPS, and your diced PORK.

Step 3: Boil for 10 MINUTES, stirring occasionally then REDUCE HEAT to SIMMER.

Step 4: Add 1/4th cup HEAVY CREAM/HALF AND HALF, 1 block of Colby freshly shredded CHEESE, 8 oz. Daisy SOUR CREAM. Stir until completely mixed, no lumps or strings.

Step 5: Add 1 tsp. of XANTHAN GUM to thicken, IF USING HEAVY WHIPPING CREAM ADD ½ TSP. (Depending on how thick you like your soup broth, you can add none for a thinner soup or add ½ tsp more to make it thicker than a snicker)

Step 6: Stir constantly for 1 minute then allow the soup to cook on SIMMER for 20 minutes, stirring occasionally to really bring all these flavors together and to make sure nothing sticks to the bottom of your pan.
