There are things we can do to adapt to our way of eating and our life-style changes don’t need to regress because of the Corona Virus.

This is the absolute essentials of the diet. Things that you MUST have to survive on a Ketogenic Diet and even a Low-Carb Diet. Fat. Electrolytes. Water.

Water. Now I suggest just buying a filtering system for a more economic and earth friendly approach. Plus, the less bottles of water that you purchase means that Senior Citizens and Children can have access to these things. However, if you just want to purchase packs of water, I would suggest buying four 24 packs of water for 3 bottles of water a day for a 30-day period. Once you look at it in this perspective, you’ll understand that you’re purchasing 96 bottles of water for about $20.00, and you can purchase a water filter pitcher system for anywhere from $14.00 to $20.00 depending on what store you go to, and you don’t have to haul in all that water. It’s a WIN-WIN.
Keto Essential Produce to Stock-Up On
This is where things get tricky. We must figure out what exactly we want to eat for 30 days and stick to it! The great thing is that Keto is a filling diet because of the amount of fat that we consume. We just have to be smart about the easily spoiled fresh produce that we consume and how we store them during this time. Not only will storing them properly ensure the longevity of the produce, but also ensure that items are available for others during this crucial time of need for community.
Broccoli. This is a great option because it freezes great for longer periods of times. It can also be bought bulk and freshly chopped and froze after washing and blanching for 3-5 minutes. You can also buy already frozen steamer bags, but I would suggest trying to stick to whole foods that you know and have as much hand in preparing as possible right now. Just purchase it, wash it, blanch it, toss it in a freezer bag and store it for up to 8 months! Another win-win, you can use it now, or later!
Green Beans. This is another great option because it freezes for longer periods of times. It can also be bought bulk and freshly chopped and froze after washing and blanching for 3 minutes. Best results would consist of you removing excess air from the bag before sealing. I would suggest trying to stick to whole foods that you know and have as much hand in preparing as possible right now. Just purchase it, wash it, blanch it, toss it in a freezer bag and store it for up to 12 months!
Cabbage. Delicious and packed full of nutrients that are great for ANY diet. Doing this properly is the key. You want to keep the core attached to the leaf’s, it will help them stay together when you blanch them. You’ll want to quarter the cabbage, blanch for 90 seconds each and then put in ice water. Use a colander to drain the wedges before putting them in your freezer bags, remove excess air and you can then store your cabbage in the freezer for up to 18-20 months! Yet another long-lasting produce that is great for your diet!
Cauliflower. Blanch your florets for 3 minutes in boiling water, drop it in ice water, remove, pat dry and place in your freezer bags for storage up to 12 months!
Zucchini. A great vegetable for everyone! Simple chop, blanch for 3 minutes, then ice bath for 1 minute, pat dry, place them in your freezer bags and store them up to 6 months!
Brussel Sprouts. These are a favorite for me. I simply blanch them for 3 minutes then ice bath them for 1 minute. I’ll then pat them dry and put in my freezer bags and they are great for 12-14 months.
Keto Essential Meats and Proteins to Stock-Up On
Meats and Proteins are easy to buy in bulk and freeze to keep their longevity without ruining the integrity of the meat. Here is a list of freezer friendly meat, and some are even budget friendly!
Steak of any variety. The secret to freeze storing your meat, is to know how to do it properly! Simply take your beef out of the packaging, wrap the beef as tightly as possible in plastic cling wrap and place it in your freezer bag with no excess air. Set your freezer to the coldest setting it will allow (do this step about an hour before you put your steaks in the freezer), this keeps your meats integrity, the colder freezer setting doesn’t allow for slow freezing. Slow freezing your meats will allow ice crystals to form and ruin the muscle and cell structure, creating a mushy meat after you thaw it. Following this step will ensure than the integrity of your cuts will remain and allow you to store it in the freezer for up to 3 months.
Chicken Thighs. Cheap and bulky buys are always great! Chicken thighs are higher fat, clean protein that just taste great and stay juicy, who doesn’t want that in their life? Simply put it in your freezer bags and store it up to 12 months!
Salmon. Simply remove all excess air from your freezer bags and store them up to 3 months in the freezer.
Bacon. This one is of course important because, well….BACON. Need I say more? Take it out of the package, place each slice lined up on wax paper, then fold it, you can then remove pieces as you want or need them without having to thaw the entire thing! You can store bacon in the freezer up to 6 months!
Eggs. Simple, easy and all safe for your Keto Diet. Buy a larger box of eggs so you can have them for all 30 days. But please, don’t freeze these!
